Analysis of the working principle and function of the egg-beater: Eggs are fed onto the conveyor belt and into the robotic arms; multiple robotic arms at the front end of the conveyor belt operate continuously. With Su Hang Airlines planning to increase flight frequencies and passenger load factors rising significantly, the catering department’s daily production of in-flight meals has increased by nearly 4,000 portions, reaching as high as 20,000 portions. As eggs are one of the key ingredients, the daily consumption amounts to over a thousand jin—that is, tens of thousands of eggs—peaking at 12,000. The process, from disinfection, washing and refrigeration to cracking, whisking and straining, is a major undertaking! Egg-beating machine The chefs in the catering department have to crack a thousand jin of eggs by hand every day, then beat and strain them; completing all these steps takes at least half a day! “Eggs that have been refrigerated are difficult to beat, but they must be thoroughly mixed and strained to prevent eggshell fragments from remaining in the egg liquid. At first, it was quite a struggle to get through half a day of this, but now that I’m used to it, it’s not so bad—though it is quite a waste of manpower.”
The meal preparation department has now introduced an automatic egg-cracking machine, which effortlessly resolves the above issues. All it takes is one person to place the eggs on the conveyor belt, and the machine mimics the manual egg-cracking motion, performing a continuous sequence of operations including ‘receiving, cracking, breaking the shell, separating and discarding the shell’. It automatically ‘cracks eggs in seconds’, processing 3,600 eggs per hour. Furthermore, an optical inspection system has been fitted at the front end of the conveyor belt to rapidly identify spoiled eggs; the cup-style separation after cracking minimises the risk of shell fragments entering the egg liquid; a robotic arm rotates 300 degrees to improve the extraction rate of the egg liquid; and a homogeniser installed at the end quickly mixes the egg liquid. The egg-cracking machine not only significantly improves production efficiency but also ensures food safety and hygiene.
