completing all these steps takes at least half a day! “Eggs that have been refrigerated are difficult to whisk, but they must be thoroughly mixed and strained to prevent any eggshell fragments from remaining in the egg mixture. At first, it was quite a struggle to get through half a day of this, but now that I’m used to it, it’s not so bad—though it is quite a waste of manpower. ” The catering department has now introduced an automatic egg-cracking machine, which effortlessly resolves the above issues. With just one person placing the eggs on the conveyor belt, the machine mimics the manual egg-cracking motion, performing a continuous sequence of operations including ‘receiving, cracking, breaking the shell, separating and discarding the shell’. It automatically ‘cracks in seconds’, completing 3,600 eggs per hour. Furthermore, an optical inspection system installed at the front end of the machine’s conveyor belt can rapidly identify spoiled eggs; the cup-style separation after cracking minimises the entry of shell fragments into the egg liquid; a robotic arm rotates 300 degrees to improve the extraction rate of the egg liquid; and a homogeniser installed at the end quickly mixes the egg liquid… The egg-cracking machine not only significantly improves production efficiency but also ensures food safety and hygiene.
